擬似米

先週の土曜日。。

木曜に搾られた新酒を買いに
近所の蔵元へ行ったときの事。

構内には、お米を蒸すときに使う
大きな袋が干されていて、その傍らに、
お米が入っているっぽい袋が・・・。

「お米、天日干しにする工程なんかあったっけ？」

と思って見ていたら、通りがかった蔵の人が、
”擬似米”だと教えてくれた。

蒸すお米の量が少ないときにこれを穴埋め的に
使うことで蒸し加減を安定させるとのこと。

シリコンの樹脂で出来ていて繰り返し使えて、
味や香りへの影響は無いと。

「へ〜〜！」って感じ。

It looks like rice is contained, but the contents are simulated rice made of silicone resin. By steaming a small amount of sake rice with a steamer, using it will eliminate the difference from steaming a normal amount of rice.

これは造り酒屋の興味深い眺めである。米は、蒸気を出す前に乾燥するか？私はちょっとした醸造sakeを勉強するべきである。
